I arrived at Rebel Food & Drink immediately after driving through what I can only assume was Edmonton's audition to become Atlantis.
The flash flood had people stopping in the middle of the road, throwing on their hazard lights, and collectively deciding that forward progress was no longer their responsibility. Entire intersections had turned into swimming pools. Traffic laws became little more than optimistic suggestions. By the time I arrived, I felt like I deserved a commemorative lifeguard whistle.
I was meeting a friend who had also survived the sinking of Edmonton, but she was running late. As the minutes ticked by, I became increasingly convinced the staff had quietly concluded I had been stood up. Honestly, I probably would have reached the same conclusion.
While waiting, I asked the bartender what her favorite cocktail to make was.
Without hesitation, she answered, "The Marilyn Monroe."
Made with Empress 1908 Indigo Gin, Angostura bitters, fresh lemon juice, lime juice, simple syrup, and egg whites, she described it with the confidence of someone introducing me to the greatest cocktail ever conceived.
Once my friend finally navigated what remained of Edmonton, I ordered one for myself.
She had not oversold it.
The Marilyn Monroe was bright, beautifully balanced, and incredibly smooth. The Empress gin brought delicate botanical notes while the fresh citrus added just enough acidity to keep everything lively. The egg white rounded the drink into a silky, velvety texture that felt refined without becoming overly sweet or heavy.
It was one of those cocktails that quietly disappears faster than you intended because every sip convinces you another one would be an excellent idea.
What elevated the experience even further was the bartender herself. Her service was exceptional from start to finish, and her deadpan humour never broke character. Every interaction felt like I was one sentence away from becoming the punchline without ever knowing exactly when the joke had started.
Great cocktails are memorable. Great bartenders are unforgettable. Rebel Food & Drink managed to deliver both.
