As someone who genuinely enjoys coconut drinks, I was excited to see this one on the menu. I was expecting the coconut to complement the mojito, not steal the show.
The coconut flavour is much stronger than anticipated, overpowering the fresh mint and lime for the first few sips. A quick stir helps distribute the coconut rum throughout the drink, creating a much better balance where all of the flavours can shine. Unfortunately, it doesn't stay that way for long. The coconut rum seems determined to separate and work its way back to the top, meaning you'll find yourself giving it another stir before long.
Even with that quirk, it's still a delicious cocktail. The coconut flavour is rich and authentic, and once everything is mixed together, it becomes a refreshing tropical take on a classic mojito.
