Once you get past the illusion, you're left with one of the best-balanced coconut cocktails I've had.

The pineapple and lime keep everything bright, the coconut tequila and coconut milk deliver a smooth tropical backbone without becoming heavy, and the demerara adds just enough richness to tie it all together. It's creamy without being thick, sweet without being cloying, and tropical without tasting like it came out of a slush machine.
