I really wanted to like this one.
El Jimador Blanco, Aperol, lime and egg white sounds like a perfectly reasonable cocktail. On paper, there’s a lot to work with.
In the glass? Not so much.
The egg white never really accomplished what it was supposed to. Instead of giving the drink that smooth, silky texture you want from a sour, it somehow just existed in the background wondering why it had been invited.
The dominant flavour was lime. Aggressively lime.
Best descriptor I can come up with: chewing on lime rinds with a bit of sugar as an afterthought.
And before I completely throw this drink under the bus, I have to acknowledge that my friends ordered different cocktails at the same time, and the balance on those was also way off. So there may have been an execution problem happening behind the bar that night.
But unfortunately, the Sunset Sour was the one I had.
And it was mediocre at best.

I probably won’t be ordering this one again.
